Grilled Norwegian White Halibut,- easy to prepare and tasty to eat in the summertime.
HALIBUT AND PRAWNS ON A SKEWER
Ingredients
Portions 4
500 g halibut fillets, cut into large cubes
1 tbsp pesto
4 bacon slices
1 tbsp salt
12 prawns
½ cucumber
3 tbsp olive oil
2 tsp Dijon mustard
- Roll the cubed fish in salt and allow to absorb for around 20 minutes. Rinse and dry the fish and brush with pesto.
- Roll the bacon round the fish. Clean the prawns. Slice the cucumber lengthwise, scrape out the seeds and then cut in thick slices. Put the fish, prawns and cucumber in order on the skewer.
- Mix the oil and mustard, and brush on the skewers. Grill them for around 6 minutes, turning often. Serve the skewers with couscous or a good potato salad
